Amazing Gluten Free Pumpkin Pancakes! {Cookie+Kate}

Hi! In this fall-filled episode we make the most perfect, gluten free pumpkin pancakes! No joke, they are amazing, check it out!

Ingredients:
1 Cup Oat Flour (or sub for a gluten free all purpose flour/ see notes for how to make your own oat flour out of old-fashioned oats)
1 Cup organic pumpkin
¼ milk choice
2 tablespoons coconut oil (or butter), melted
1 tablespoon lemon juice (about 1 small lemon, juiced)
1 teaspoon maple syrup (or honey)
1 teaspoon vanilla extract
2 eggs
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves or allspice

Directions:
Mix wet ingredients in one bowl. In another mix the dry ingredients and form a well in the center. Add in the wet ingredients and whisk until combined but don’t over mix. Oil a pan on medium to low heat and cook ¼ cup pancake batter for 3 minutes on one side and about 90 seconds on the other. Enjoy with grassfed butter and maple syrup, yum!

Tips:
*To make oat flour grind 1 cup of oats in a high speed blender on the highest setting for about 15-20 seconds, mixing the flour in between so that it evenly becomes flour. This will create your one cup of oat flour.
*If you don’t have the individual spices, use 2 tsp of pumpkin pie spice mix.
